i! Here is a family budget meal that I made for supper on Friday. The recipe is from "Back to Family Time Cooking", a local cookbook. Enjoy!
PORCUPINES
Mix:
1 pound ground beef (I used lean ground beef)
1/4 cup onion, chopped
1 tsp. salt
1/4 tsp. pepper
1/4 cup uncooked rice (I used Minute rice)
1/2 cup finely chopped green pepper (optional)
Form into balls. Place in small roaster.
Sauce
Mix:
1 can tomato soup
1 can water
1 tbsp. brown sugar
1 tbsp. Worcestershire sauce
Pour over meatballs. Bake 1 hour at 350 degrees F.
VERDICT: These porcupine meatballs do not take long to prepare and they were tasty served with mashed potatoes and a side of corn. I did bake the meatballs longer than what the recipe states, but that would depend on your oven. This was a good family-friendly meal with ingredients readily on hand.
