Spicy Shrimp Dip
1 and 1/2 cups water 1/2 pound unpeeled shrimp 1 3-ounce package cream cheese 1 8-ounce carton sour cream 1 envelope (0.7 ounce) Italian salad dressing mix 2 tablespoons green pepper, finely chopped 2 teaspoons lemon juice
Bring water to a boil; add shrimp, cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill, peel, de-vein, and chop shrimp.
Beat cream cheese at medium speed of electric mixer until creamy. Stir in sour cream, shrimp, and remaining ingredients. Cover and chill at least one hour. Serve with fresh vegetables.
Makes 1 and 2/3 cups.
