Artichoke and Tarragon Dip
12 oz canned marinated artichoke hearts, coarsely chopped 1/2 cup mayonnaise 1/2 cup sour cream 1/2 cup freshly grated Parmesan cheese 3 Tbs chopped fresh tarragon, or 1 Tbs dried tarragon Salt and freshly ground pepper to taste
Combine all ingredients and place in a 3-cup ovenproof baking dish or casserole. Bake in a preheated 350F oven until heated through, about 30 minutes. Serve with raw vegetables, chips, or crackers.
Makes about 2 cups.
