Mexican Meat Loaf
1 lb. ground beef
1 1/2 tsp. garlic salt (or to taste)
1/2 cup chopped onion
1/4 cup green peppers
cook until meat is brown & vegetables tender
Stir together:
2 8 oz cans tomato sauce
1 cup milk
2 slightly beaten eggs
1 12 oz. can whole kernal corn, drained
1/2 cup sliced green olives ( can use black), optional
few dashes bottled hot pepper sauce or 1/4 cup jalopena peppers,
optional
3/4 cup corn meal ( I prefer yellow)
2 to 2 1/2 tsps. chile powder
2 tsp.salt
2 tsp. cumin
1/2 tsp. each oregano, corrinder, thyme
Add meat mixture to above, blend together, put into a baking dish. Bake
in
oven at 350 degrees for 45 mins. or untill knife inserted coes out
clean.
Good cut into squares & served with warmed salsa & shredded Montery
cheese over top.
