Twice Fried Chicken
3 pounds or more chicken pieces
1 1/2 cups buttermilk
2 cups seasoned flour*
2 cups flour with just salt and pepper
3 eggs, beaten with 2 tablespoon water added to them
Canola oil for frying
1/2 cup butter
Heat electric skillet or skillet with the half cup butter and about a cup of oil. (will need add to this if doing a lot of chicken)
Dip prepared chicken pieces, one at a time in the egg mix, shake off excess, then into the salt and pepper flour. Next dip into the buttermilk and finally into the seasoned flour.
Place each peice into skillet, turning to brown eveninly on all sides. Once each piece has browned, lower heat and cover.
Check a couple times to make sure it in't tiicking, other wise let cook until tender and done.
Remove lid from skillet and turn up the heat. fry until the coating on the chicken once again becomes crisp. will need to turn more frequently as at this stage the chicken will burn quicker.
*Seasoned Flour: Add per your taste the following pices to the flour.
- Chicken or poultry seaoning
- garlic powder
- onion powder
- marjorium
- thyme (can use lemon thyme)
- rosemary
- dill
- cayenne pepper
