CHICKEN SALAD CROISSANTS
2 cups chunked cooked chicken 3/4 cup mayonnaise 3/4 cup chopped walnuts 1/2 cup sweetened dried cranberries 1/4 teaspoon salt 1/8 teaspoon black pepper 4 large croissants, split 4 lettuce leaves (optional)
In a large bowl, combine chicken, mayonnaise, walnuts, cranberries, salt and black pepper; mix well. Spread equally over croissants and add a leaf of lettuce to each, if desired. Serve immediately.
