This is one of three new dishes that I created Wednesday morning for our Home league Christmas Party.
I had scads of cranberry sauce and decided that I needed to create something using part of it. I had no idea how this would turn out. I just knew what I was using were ingredients that I liked.
I used the gellied cranberry sauce, although anykind could be used. I did try smoushing the sauce with a spoon and finally gave up, washed hands (again), and just starting smouching the sauce between my fingers to get to a consistancy that it would blend easier with the other fruit.
The batter could actually be placed on the bottom of the cooking dish ( I did this with my other recipe I used apricots with) and the fruit mixture pured over the top. But by using it the way that I did it created more of a cake style dessert rather than a pastry style dessert.
I thought of other fruits that might be able to be used, but to me the three that I did use were what seemed to blend together.
It went over great and even a couple who don't like cranberries said that they liked this.
This is something that I plan on making again this holiday season.
