1. | Peel, pit and chop peaches. |
2. | In saucepan combine peaches,lemon juice, and pectin. |
3. | Cook over high heat stir constantly about 5 minutes or until full rolling boil. |
4. | Stir in sugar. |
5. | Return to a full rolling boil. |
6. | Boil hard for (1) minute stir constantly. |
7. | Remove from heat and add vanilla extract and bourbon (bourbon is optional). |
8. | Skim off foam. |
9. | Ladle in hot sterilzed jars process in boiling bath 5 minutes. |
