Caramel Oranges
1 cup sugar 1/2 cup hot orange-flavored tea 1 - 2 drops oil of orange or 1/4 teaspoon vanilla 4 medium oranges, peeled and sliced crosswise 4 teaspoon finely snipped crystallized ginger 6 orange peel curls
1. In a small heavy saucepan heat sugar, without stirring, over medium-high heat just until it begins to melt. Reduce heat to medium-low; cook and stir with a wooden spoon about 4 minutes or until sugar is melted and turns a deep golden brown. Do not overcook. Remove from heat. Very slowly and carefully stir hot tea into caramelized sugar. If necessary, return to heat; cook until any hard sugar particles dissolve; cool. Stir in oil of orange or vanilla.
2. To serve, pour syrup onto 6 dessert plates. Arrange orange slices in syrup. Sprinkle each serving with ginger and garnish with an orange peel curl.
