Butter Rum Bananas
2 tbsp butter
1/2 cup sugar
2 tbsp water
2 tbsp light rum
1/2 tbsp lemon juice
grated rind of half of a lemon
1/2 tsp vanilla or rum extract
4 small bananas, peeled & halved
whipped topping or ice cream
Melt butter in a large skillet. Add sugar & water. Stir well. Cook till reduced to a heavy syrup, stirring occasionally so that the mixture doesn't stick to the bottom of the pan.
Add rum, lemon juice, lemon rind, & your choice of flavoring,{vanilla or rum extract} Cook 2 minutes or till golden in color.
Remove from stove & add banana pieces. Plunge them into the syrup, covering them as well as possible.
Serve warm, not hot topped with whipped topping or along side ice cream.
