Cream Gravy For Fried Poultry
Fried poultry
3 Tbs. dried poultry drippings
3/4 cup milk
3 Tbs. flour
1 tsp. salt
1 Dash pepper
3/4 cup milk (again)
Remove fried poultry to a platter. Keep warm. Reserve 3 tablespoons of
the droppings in the skillet. In a screw top jar combine the 3/4 cup
milk, flour, salt and pepper. Shake until well combined. Stir into
drippings in the skillet. Stir in 3/4 cup milk. Cook over medium heat,
stirring constantly until thickened and bubbly. Cook and stir 1 to 2
minutes more. If necessary, thin with a little additional milk. Makes 1-
1/2 cups.
