TASTY TURKEY ROLL
(Serves 6)
I N G R E D I E N T S
1 pound Ground Turkey
1/2 cup soft bread crumbs
1/4 cup tomato juice
1 egg, beaten
2 garlic cloves, minced
1/4 teaspoon oregano
1/4 teaspoon black pepper
1/4 pound Turkey Ham, thinly sliced
1 cup grated mozzarella cheese
Vegetable cooking spray
2 tablespoons chili sauce (optional)
D I R E C T I O N S
In medium-size bowl combine ground turkey, bread crumbs, juice, egg, garlic, oregano and pepper. On rectangular (12 x 16-inch) piece of wax paper, shape turkey mixture into 9 x 12-inch rectangle. Place turkey ham over top of turkey mixture and sprinkle cheese over turkey ham. Roll turkey, jelly-roll style, using wax paper to help make roll. Lightly press ends of roll to seal. Place turkey roll seam-side-down on 9 x 13 x 1-inch baking sheet, lightly coated with non-stick vegetable cooking spray. Bake at 350 degrees F. 1 hour or until center of turkey roll reaches 160 degrees F. on meat thermometer and ground turkey is no longer pink. To serve, drizzle 2 tablespoons chili sauce over top of roll, if desired, and cut into 12 equal pieces.
