PITA POCKETS al GRECO
(Serves 8)
I N G R E D I E N T S
1 tablespoon margarine or oil
1 pound Ground Turkey
1 cup onion, finely chopped
1 clove garlic, chopped or 1/2 teaspoon garlic powder
1 tablespoon dried parsley
1 teaspoon dried oregano
8 mini pita bread (3" in diameter), warmed
1 cup tomato, chopped
1 cup cucumber, peeled and thinly sliced
2 ounces feta cheese
D I R E C T I O N S
Over medium-high heat, melt margarine or oil in medium-size skillet (or spray with non-stick spray). Saute ground turkey, 1/2 cup onions and garlic until meat loses pink color, about 5 minutes. Stir in parsley and oregano. Cook 1/2 minutes. Trim about 1/2" off top of each pita. Spoon meat mixture into each pita. Top with remaining onion, tomatoes, cucumber and feta cheese.
