MUSHROOM STUFFED TURKEY MEAT LOAF
(Serves 4)
I N G R E D I E N T S
1 pound Ground Turkey, defrosted
1 egg
1/2 cup seasoned bread crumbs
1/4 cup water
1 tablespoon dried onions
1 tablespoon green peppers, chopped
1/8 teaspoon pepper
2 tablespoons catsup
1 teaspoon prepared horseradish
1/2 teaspoon prepared mustard
Stuffing
1 tablespoon margarine
1/4 cup chopped onions
1/4 pound sliced mushrooms
2 slices whole wheat bread, torn into cubes
1 teaspoon dried parsley
1/4 teaspoon dried thyme
Dash salt
Dash pepper
D I R E C T I O N S
In a small skillet, melt margarine over medium heat. Add chopped onions and sliced mushrooms; saute for 2 minutes. Toss in bread, parsley, thyme, and a dash of salt and pepper. Stirring constantly, cook until bread is lightly browned. Set aside.
Preheat oven to 350 degrees F. Combine all ingredients of meat loaf mixture. Press half of mixture into lightly greased loaf pan. Top with 2 cups mushroom stuffing and spread remaining meat mixture over stuffing. Bake for 45-60 minutes, or until neat is no longer pink in center of loaf.
