Spinach Skillet Meals Makes 4 servings, 1 ½ cups each INGREDIENTS - 1 (10 oz.) can spinach, drained and rinsed
- 2 (16 oz.) cans low sodium or no salt added stewed tomatoes
- 1 cup cooked brown or white rice
- 1 cup white beans, drained and rinsed (or your favorite beans)
- pepper to taste
- Additional spices to try: oregano, basil, red pepper,
- garlic powder
INSTRUCTIONS Cook the spinach and stewed tomatoes using a small pan, pot or electric skillet, on medium-high heat*. Cook until heated through. Stir gently. Add the rice, canned beans and seasonings. Cook until heated through. *For the microwave: Use a microwave safe, covered dish. Combine all ingredients. Cook until heated. Rotate the dish & stir gently as needed. Other variations to try: For more protein and calories try adding shredded cheese or bits of cooked poultry. Add tomatoes, onions (optional), kidney beans, and/or corn. Season with cumin and garlic. Try whole-wheat pasta instead of rice. Add your own choice of mixed of vegetables, beans, rice and herbs. |
