Bob Evans Cheddar Potato Soup (copycat)
1 can Campbell's cheddar cheese soup
1 can chicken broth
7 medium size potatoes, cut in 1" cubes
1 lb. grated cheddar cheese
4 cups whole milk
2 Tbs. butter
2 Tbs. cornstarch
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. onion powder
1/2 tsp. garlic salt
Boil the potatoes until soft. In a large pot, add in cheese soup,
chicken broth, milk, stir and bring to a boil. Add in cheese,
cornstarch, butter and seasonings. When it's boiling again, reduce
heat and simmer for 15-20 minutes and add in the potatoes. Simmer
for another 15 minutes. Top off with chives and bacon bits.
