Low Fat Dairy Noodle Kugel
This is a low fat dairy noodle kugel from Our Food, by Anita Hirsch. I have never tried it. She also has another one using low fat cheese and cour cream, but insludes 1/4 lb butter, 4 eggs, more sugar, raisins, etc. It soesn't seem very low fat to me, so I won't include it.
Low Fat Noodle Kugel
2 eggs (I think egg substitute could be used here)
1 C light ricotta
1 C non-fat sour cream
1/2 tsp vanilla ( I would add some lemon zest here)
2/3 C sugar
1/2 lb fine egg noodles, cooked
1 tbs sugar
1/2 tsp cinnamon
Pre heat oven to 350F
Beat eggs in a bowl. Add cheese, sour cream, vanilla, 2/3 C sugar and cooked noodles. pour into a lightly greased 8X8 inch pan and dust with cinnamon and sugar mix. Baker for 45 minutes.
Some thoughts on this recipe. If you have no problem with sugar, raisins might be a nice addition. If you do have a sugar problem, there should be no problem using a heat tolerant sugar substitute like Splenda or asculfame products like Sweet-One.
