CARROT CAKE(Can be served this as a cold carrot kugel ) ingredients - 2 cups flour
- 2 cups sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 2 tsp salad oil
- 4 eggs
- 3 cups grated carrots (1 lb.)
directions - Beat the eggs, gradually add the sugar until thick and light in color.
- Add the oil,
- Add the dry ingredients, mixing each in turm
- Fold in the carrots.
- Pour into 2 loaf pans (greased) or bundt pan.
- Bake for 50 minutes @3250 F.
