MANDARIN ORANGE SALAD
60 Ritz crackers, crushed
1/4 lb. butter, melted
1/4 c. sugar
1 (6 oz.) can unsweetened frozen orange juice, thawed
1 can Eagle Brand sweetened condensed milk
1 (8 oz.) container Cool Whip
2 sm. cans mandarin oranges, drained
Crush crackers finely and add melted butter and sugar to them. Press mixture into 9 x 13 x 2 inch baking dish. Reserve some of the crumb mixture for garnish. Blend thawed orange juice and milk. Stir in Cool Whip and oranges. Fold in. Do not beat. Pour mixture over crumb crust. Top with reserved crumbs. Refrigerate or freeze until serving time.
