Roast Leg Of Lamb
7 cloves garlic
1 cup blanched (3 min boiled) orange zest
1/2 cup basil leaves
1 anchovy filet, pepper
3 tbsps olive oil
chop & mix marinade, then cut deep 1" wide slits
all over meat and stuff marinade into pockets. set lamb
fat-side up in a roasting pan and put in a 350°F oven for
20 minutes - then add 1 cup dry red wine. after 20 minutes
add some very good whole black olives and baste with
pan juices. continue basting every 10-15 minutes with
pan juices until meat thermometer reads at least 135°F
all over. set meat in a clean pan in the oven with heat
off for 20 minutes to rest. meanwhile take the roasting
pan and deglaze with some chicken broth. add about a
tbsp of tomato paste & salt to taste.
