Merguez is a spicy Moroccan sausage made from lamb. These lamb patties have the same flavor but are easy to make at home.
Merguez Serves 6
1-1/2 pounds ground lamb 2 teaspoons minced garlic 1 teaspoon paprika 1 teaspoon ground cumin 1/2 teaspoon (or more) red pepper flakes 1/4 teaspoon pepper salt to taste (do not omit!) 1 tablespoon olive oil
Combine all ingredients except oil. Shape into patties or sausage link shapes. Heat oil in a skillet. Add sausages and cook 8 minutes, turning to brown evenly.
