Creamed Ham Deluxe:
1 tbsp ham fat or butter,
1 tbsp chopped onion,
2 cups ground, finely chopped or shredded ham or meat from country ham, picnic, hock or jowls,
4 tbsp flour,
2 1/2 cups milk.
Place fat in frying pan, add onion and cook until onion is tender, but not brown. Add ham, stir for one minute. Add flour, stir for one minute. Add milk, 1/2 cup at a time, stirring constantly. Cook until mixture thickens. Serve on hot biscuits, toast, waffles or other favorite food.
