Celebrity Ribs
INGREDIENTS:
Seasoned salt to taste
1 teaspoon ground pepper
5 pounds baby back ribs or
ribs of your choice
6 garlic cloves, chopped
2 jalapeno chiles, seeded and chopped
2 green bell peppers, sliced
2 yellow bell peppers, sliced
2 red bell peppers, sliced
2 onions, sliced
TO PREPARE:
Sprinkle the seasoned salt and pepper over the surface of the ribs. Rub the garlic and jalapeno chiles over the ribs. Arrange the ribs on a sheet of foil large enough to wrap tightly around the ribs. Layer the bell peppers and onions over the ribs. Seal the foil tightly. Marinate in the refrigerator for 24 to 48 hours. Place the foil packet in a heavy baking pan and place the pan on the middle oven rack. Bake at 300 degrees for 6 to 8 hours or until tender; the meat should easily fall off the bones. Check the ribs periodically to avoid overcooking.
