Veal Steak Vesuivo
(Serves 4)
- Veal steaks, 6-7 ounces each 4
- SaltTo taste
- Olive oil2 tablespoons
- Oregano, dried1 teaspoon
- Butter2 tablespoons
- Garlic2 cloves
- Chicken broth1/2 cup
- Salt and pepper To taste
- Peas, fresh or frozen1 cup
METHOD OF PREPARATION
1. Preheat oven to 475 degrees.
2. Season each veal steak with olive oil, salt, oregano, pepper flakes. Let sit in the refrigerator for 2 hours.
3. Heat a skillet until very hot. Using butter, sear the steaks on both sides until well browned.
4. Place in a baking dish and bake in the hot oven until medium rare. About 12 minutes.
5. Meanwhile, to the same skillet, add the garlic, remaining oregano, pepper flakes and quickly sauté for 1 to 2 minutes. Add the chicken broth, season with salt and pepper to taste.
6. Place the steaks on a platter and pour the peas over the top. Serve at once.
