Quick One Skillet Dinner 4 servings
1 lb. Polsa Kielbasa 4 potatoes, peeled 2 large onions 2 green peppers 3 cloves garlic 1/4 c. oil Salt and pepper to taste Pinch of crushed red pepper, optional
Chop Kielbasa, potatoes, onions and green peppers and mince the garlic.
Pour oil into large skillet and heat on medium-high heat. (A cast iron skillet works great.) When oil is hot, add all ingredients to skillet and stir. If you like it hot, add the crushed red pepper also. Stir every few minutes for even cooking. Cook about 30 minutes or until potatoes are fork tender.
