Thrifty Beef Breakfast Sausage
1 lb. lean ground beef or pork
1/4 tsp. sage (up to 1 tsp. total), to taste
1/4 tsp. marjoram (up to 1/2 tsp. total), to taste
1/4 tsp. thyme (up to 1/2 tsp. total), to taste, optional
1 tsp. salt
1/8 tsp. pepper
1 Tbs. water (up to 3 Tbs. total)
Sprinkle the seasoning over the ground meat. Knead until thoroughly
blended. Make into patties. Refrigerate in airtight containers for 2
to 3 days to allow flavors to blend. Fry until golden brown. Freeze
any unused sausage.
