Apple-ish Hot Italian Sausages with Self-Relish
5 to 6 uncooked Hot Italian sausages �?about a pound (Johnsonville or similar) 2 cups apple cider (approx) 1/4 c. water 1 medium yellow onion, chopped 2 cloves garlic, pressed or finely chopped A suitable number of hoagie buns if you'd like these to be sandwiches
In a frying pan, place the sausages, onion, garlic, water, and enough cider to reach about half way up your sausages. Turn heat to medium and cover until the cider begins to steam. Remove the cover and continue to cook, turning the sausages with tongs several times, for about 15 �?20 minutes, or until most of the liquid has been reduced. The sausages will sort of start to brown a bit, your indicator to remove the sausages. At this point you may want to finish the sausages off on the grill for two or three minutes, but this step is completely optional.
Take the onion and reduced cider liquid out of the fry pan, put into a small bowl, and serve along side as a relish, garnish, or addition to the sandwich. |
