CUSTARD JOHNNY CAKE
1 cup cornmeal
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
2 eggs -- well beaten
1 cup milk
Preheat the oven to 350 degrees F. Grease a rectangular baking pan. Mix and
sift together the cornmeal, flour, sugar, baking soda, and salt in a large
bowl. Beat in the buttermilk, then stir in the eggs. Add the milk, blending
quickly. Pour into the prepared pan. Bake for about 35 minutes. Serve
immediately, cutting into squares at the table. The custard will rise to the
top in baking.
