Canadian Bacon Pizza

1 Tbs. cooking oil
1/3 cup chopped green pepper
1/2 cup chopped onion
1 clove garlic, minced
2 Tbs. chopped fresh parsley
1 (10-3/4 oz.) can tomato puree
1 tsp. sugar
3/4 tsp dried whole oregano
1/4 tsp. salt
1/4 tsp. pepper
Pizza Crust (below)
2 cups shredded Mozzarella cheese (8 oz.)
1 cup shredded Cheddar cheese (4 oz.)
1 lb. ground pork or bulk pork sausage
1/4 cup chopped onion
6 oz. pkg. Canadian-style bacon
6 to 8 fresh mushrooms, sliced
1 green pepper, sliced into rings
1/4 cup chopped red pepper

Heat cooking oil in a heavy skillet over medium heat. Add 1/3 cup
chopped green pepper, 1/2 cup chopped onion, garlic and parsley; cook
stirring frequently until tender. Add tomato puree, sugar, oregano,
salt and pepper. Bring to a boil; reduce heat and simmer about 30
minutes, stirring occasionally. Spread sauce over pizza crust leaving
a 1/2-inch border around edges. Combine Mozzarella and Cheddar
cheese; sprinkle half of cheese over pizza sauce. Combine ground pork
and 1/4 cup chopped onion in a skillet; cook over medium heat until
meat is browned, stirring to crumble. Drain well on paper toweling.
Spoon half of pork mixture onto pizza. Layer Canadian-style bacon,
mushroom slices and green pepper rings on top of pizza. Sprinkle with
the remaining
ground pork and chopped red pepper. Bake in a 450 for 10 minutes. Top
with the remaining shredded cheese and bake an additional 10 minutes.
Makes 1 (12-inch) pizza.

PIZZA CRUST:
3/4 cup warm water (110F to 115F)
1 pkg. active dry yeast
2 Tbs. cooking oil
1-1/2 tsp. salt
1 tsp. sugar
2-1/4 cups flour

Combine water and yeast; let stand 5 minutes. Add cooking oil, salt
and sugar, stirring until dissolved. Gradually add flour, mixing
well. Turn dough out onto a lightly floured surface; knead until
smooth and elastic. Shape into a ball, and place in a greased bowl,
turning once to grease top. Cover and let rise in a warm place about
1 hour or until doubled in bulk. Punch dough down. Lightly grease
hands and pat evenly into a lightly greased 12-inch pizza pan. Cover
and let rise
in a warm place about 1 hour or until doubled. Bake at 450 for 5
minutes. Makes 1 (12-inch) pizza crust.
