SPINACH & CHIVE FETTUCCINE WITH BACON,
SPINACH AND CHERRY TOMATOES
10 oz. Mendocino Spinach & Chive Fettuccine
10 pieces bacon, cut into 1" strips
2 Tbs. olive oil
1 med red onion, chopped
2 tsp garlic, minced
1 bunch spinach, washed and stemmed
1 cup cherry tomatoes
1 tsp. thyme, chopped
salt & petter to taste
4 Tbs Asiago Cheese, grated
Place bacon in a large saute pan over moderate heat, cook until lightly browned,
remove and drain on paper towels. Heat olive oil in same pan, add onions
and saute for 2-3 minutes. Add garlic, spinach, tomatoes and thyme and cook for
3-4 minutes. Keep warm. Cook pasta according to cooking instructions.
Drain, toss with bacon and veggies. Season to taste and sprinkle
with Asiago Cheese. ENJOY!
