Penne Pasta with Tomatoes
1 tbsp butter
1 tbsp olive oil
1 small onion, chopped
28-oz can italian plum tomatoes, drained & chopped
1 cup whipping cream
1/4 tsp dried crushed red pepper flakes{optional}
salt & pepper to taste
1 lb penne pasta
1/4 cup, or more of parmesan cheese
2 tbsp or more, minced fresh chives
In a large heavy saucepan, melt butter with oil over medium heat.
Add onions & saute till almost tender. Add tomatoes & cook uncovered until almost no liquid remains.
Stir in cream & red pepper flakes if desired. Boil until the mixture reaches a sauce consistency, about 2 minutes. Add salt & pepper to taste.
Meanwhile, cook pasta according to pkg directions. Drain.
Pour hot sauce over cooked pasta.
Toss & sprinkle with parmesan & chives.
