Vegetables with Pasta
2 cups fresh tortellini
1 bag frozen broccoli, corn & red peppers, thawed & drained
1 tbsp olive oil
1 tsp salt
1 tsp lemon juice
1 cup fresh or canned diced tomatoes
In a large saucepan, cook tortellini according to package
directions;drain & return to pan.
Cook veggies according to package directions; add to tortellini.
In a small bowl, combine oil, salt, & lemon juice. Stir in tomatoes.
Stir tomato mixture into pasta & veggies; cook over medium heat 5
minutes or till heated through.
