Lots of people like spaghetti but don't care for the tomato taste. Spaghetti is one of those foods that is great for diabetics because it takes so long to digest and does not raise your blood/sugar levels quickly. Here is an alternative for you......
Mushroom/Spaghetti with Chicken
Boil 1 handfill of spaghetti noodles in salted water
Rinse well with cold water to remove most starch
Set aside - *cold water also helps to keep from all sticking together. It also will keep in fridge in covered container for 3 days.
In small skillet, brown small chunks of chicken breast in a bit of good oil.
Add small or chopped mushrooms
Add 1 small onion chopped small
Season to taste and cover on low for 20 minutes
In large bowl, mix spaghetti and meat mixture and 1 can Campbell's Mushroom soup plus 1/2 the can of milk.
Pour into baking dish and bake in 350* oven for about 20 minutes (just enough to reheat spaghetti)
Serve with any favourite veggies on the side.
*Option: Sprinkle Parmesan cheese over spaghetti before serving
