Preheat Oven. Thaw spinach and squeeze between paper towels to get all water out. Set aside. In a large skillet cook the ground beef, onions, garlic, salt, pepper, oregano and basil, until meat is no longer pink in the middle. Drain well. Add the tomato paste, tomato juice and sugar. Stir to blend. Bring mixture to a boil. Reduce heat, cover and simmer while preparing filling. In a large bowl combine the ricotta cheese, first amount of mozzarella cheese, slightly beaten eggs and parmesan cheese and the drained spinach. Mix well. Stuff the uncooked manicotti with filling. Layer stuffed pasta in pan. Cover with foil. Bake in hot oven for for allotted time. Remove foil. Top with remaining cheese and bake additional 15 minutes. Let stand 10 minutes before serving. Serve with your favorite warm breads or rolls. Serves: 6 �?8 |
