Peach Cobbler
1 1/2 cups flour 1 cup sugar 4 tablespoons baking powder 2 teaspoons oil 1 1/4 cup milk 1 1/2 sticks butter (3/4 cup) (not margarine) 1 qt. canned peaches (I use sliced freestones), drain and reserve juice 1/2 cup syrup off of peaches cinnamon brown sugar
Melt butter and pour into 13x9-in. pan. Mix flour, sugar, oil, baking powder, and milk together and pour over melted butter. Put peaches on top of batter, I sprinkle them with cinnamon and brown sugar (I don't measure). Pour reserved syrup over peaches. Bake @ 325 degrees for 1 hour and 15 minutes or till golden brown.
