QUICK AND EASY CINNAMON TOAST COBBLER
1 14 oz. can Sliced Peaches 1 Tbsp. Cornstarch 1/4 tsp. Salt 1 Tbsp. Lemon Juice 1/4 C. Butter (or margarine) 3 slices dry Bread 1/4 C. Butter (or margarine) - melted 1/3 C. Sugar 1/2 tsp. Ground Cinnamon 1/4 tsp. Ground Nutmeg
* Drain peaches, reserving 1 C. syrup. Combine cornstarch and salt. Slowly blend into reserved syrup.
* Cook and stir till mixture coes to a boil. Reduce heat. Cook and stir for 2 minutes. Add lemon juice, 1/4 C. butter and peaches. Heat just to bubbling. Pour into a greased baking dish.
* Cut bread lengthwise into 1" strips, and dip into melted butter, then into a mixture of sugar, cinnamon and nutmeg. Arrange slices of bread over peach mixture.
* Bake at 375F for 20-25 minutes, or until toasty. Serve while still warm with cream or ice cream.
