Tuna Salad Muffins 1 1/2c all-purpose flour 1tbsp granulated sugar 2 tsp baking powder 1/2 tsp salt 1 can (6 1/2 oz/184g) tuna 1/2 c plain yogurt 1/4 c diced celery 1/4 c diced green onion 1/4 c sliced pimiento stuffed olives 2 tbsp chopped sweet red pepper 1 egg 3/4 c milk 1/3 c vegetable oil In a large bowl, combine flour, sugar, baking powder and the salt. Drian and flake tuna. In another bowl combine the tuna, yogurt, green onion, celery, olives and red pepper. Whisk together the egg, milk and oil and pour over the dry ingredients. Pour the tuna mixture over the top and mix until the dry ingredients are moist. DO NOT OVER MIX. Spoon the mixture into large greased and paper-lined muffin tins. Bake at 350F(190 C.) for 20 - 25 minutes or until golde brown and the tops are firm to the touch. Yeilds 8 muffins. Recipe can be doubled. Enjoy |
