Butter Tarts
pastry boiling water 1/2 cup raisins 1/4 cup butter 1/2 cup packed brown sugar 1/4 teaspoon salt 1/2 cup corn syrup 1 slightly beaten egg 1/2 teaspoon vanilla a few drops lemon juice
Make pastry and line muffin cups. Heat oven to 375 F.
Pour boiling water over 1/2 cup raisins and soak until edges begin to turn white (about 5 minutes), drain.
Cream 1/4 cup butter with 1/2 cup packed brown sugar. Blend in 1/4 teaspoon salt, 1/2 cup corn syrup, 1 slightly beaten egg, 1/2 teaspoon vanilla and a few drops lemon juice. Fold in drained raisins. Spoon mixture into unbaked shells, filling about 2/3 full.
Bake at 375 F for 15 to 18 minutes. Do not allow filling to bubble.
