APPLE CREAM TART
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup butter
7 tablespoons sour cream
2 medium Golden Delicious apples
3/4 cup sugar
1/4 cup all-purpose flour
Pinch salt
3 egg yolks -- beaten
1/3 cup sour cream
2 tablespoons apple jelly -- melted
Combine 1 cup flour and 1/4 teaspoon salt; cut in butter with a pastry
blender until mixture resembles coarse meal. Add 7 tablespoons sour cream, 1
tablespoon at a time; stir with a fork until dry ingredients are moistened.
Stir in an additional tablespoon of sour cream if mixture seems too dry.
Shape into a ball, and chill 30 minutes.
Roll dough to 1/8-inch thickness on a lightly floured surface. Fit pastry
into a 9-inch round tart pan; trim edges.
Peel and core apples; slice each into 16 wedges. Arrange wedges in tart pan
shell. Combine sugar, 1/4 cup flour, pinch of salt, egg yolks, and 1/3 cup
sour cream; mix well. Pour evenly over apples; bake at 350 degrees F. for 55
to 60 minutes or until set. Let cool; brush with apple jelly
