2 cups fresh basil leaves 2 garlic cloves, -- chopped 2 ounces pine nuts Salt and pepper 1/2 cup Parmesan cheese 1/2 cup olive oil
Place the basil, garlic, pine nuts and 1/2 teaspoon salt in the food processor, grind into a paste. Add the cheese and grind until thoroughly blended. With the machine running slowly add the oil. Adjust the seasonings. Pour into a bowl.
This is one of my favorites...I have found that if you toast your pine nuts in a shallow cake pan in the oven on 375 for 5-10 minutes it brings out alot of flavor.
