Cornish Hens And Summer Vegetables
4 Cornish hens
2 Tbs. fresh basil
6 garlic cloves, minced (or pressed)
White pepper
Salt
Sage
1 apple
Butter
2 summer squash
2 zucchini
1 red bell pepper
Clean Cornish hens. Make two slits on each side of hen breast side
up. Place in large roaster. Mince or press 6 garlic cloves. Chop
fresh basil and mix with garlic. Stuff the Cornish hens with the
basil and garlic mixture then rub with butter. Place a quarter of an
apple in the cavity of each hen. Sprinkle white pepper, salt and
sage on each hen to taste. Bake at 350 for 1 hour. Take out and
baste, then add summer squash, zucchini and red bell pepper and bake
for 30 more minutes. Take the lid off the last 10 minutes for hens
to brown.
