Roast Quail
Season the dressed birds with salt and pepper. Melted butter goes best in the baking pan with some poured over the quail. You can use thin slices of bacon over the birds. Put in a hot oven and bake 15 minutes at 450 degrees (F). Turn heat down to 350 degrees (F) until the quail are chestnut brown. If you want extra tenderness, baste several time with water and melted butter. Thicken the drippings with flour for a good gravy.
