LIGHT TURKEY PICADILLO
1 pound lean ground turkey
2 teaspoons olive oil
1 cup chopped onions
1 clove garlic -- minced
1/2 cup green bell pepper -- diced
2 tablespoons chiles -- diced
14 1/2 ounces whole tomatoes -- canned, chopped
1/2 cup raisins
1 large potato -- peeled and cubed
2 tablespoons capers -- drained
1 teaspoon kosher salt
3 tablespoons barbecue sauce
Brown the turkey in a large nonstick skillet. Remove to a plate and wipe out
the pan. In the same skillet, heat the oil and cook the onions, garlic, and
bell peppers, covered, until golden. Stir frequently.
Stir the remaining ingredients into the pan and return the turkey to the
skillet. Loosely cover and simmer for 20 minutes. While it is cooking, add
water a tablespoon at a time if the sauce is too dry (this will depend on
the type of barbeque sauce used).
Yield: 4 servings.
