STUFFED TURKEY MEDITERÁNNEO
1 turkey approximately 5 kg - 11 lbs
500 gr - 1.1 lbs minced beef
10 chopped roasted chestnuts
60 gr - 2 oz pine seeds
2 finely chopped onions
2 tbspns cooked and well drained rice
4 tbspns brandy
1 lemon halved
salt, pepper
cooking butter for basting
Wash the turkey and rub it with the lemon everywhere outside and inside
and salt and pepper it. Heat a little butter in a pan and brown the
minced beef and onion together, mixing them together well. Scald them
with the brandy and then add the chestnuts, pine seeds, rice, salt and
pepper and mix everything together well. Remove the pan from the flame
and spoon the stuffing into the turkey and sew the opening of the turkey
shut with a clean double thread or string. Baste the turkey with the
butter, place it in a roasting pan with 3 -4 cups of water and roast it
in a medium preheated oven at 180 C - 350 F for 4 - 5 hours. Check the
liquids in the roasting pan periodically and baste the turkey every half
hour with the pan liquids. If necessary add a little more water to the
pan as it is required so the turkey does not dry out.
