FLUFFY DOUGHNUT PUFFS

Ingredients
Makes 3 Dozen Shortening for deep frying 2 eggs, beaten 1/2 teaspoon vanilla 1 cup sugar, divided 1/2 cup milk 2 cup all-purpose flour 1-1/2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons Shortening, melted 1/4 teaspoon nutmeg

Instructions
Heat 2 or 3 inches to 365ºF in deep fryer or deep saucepan. Combine eggs, vanilla and 1/2 cup sugar in large bowl. Beat at high speed of electric mixer until light and lemon-colored. Stir in milk. Combine flour, baking powder and salt. Add to egg mixture at low speed. Stir in 2 tablespoons melted shortening. Drop by teaspoonfuls, a few at a time, into shortening heated to 365ºF. Fry 2 or 3 minutes or until golden brown. Turn as needed for even browning. Remove with slotted metal spoon. Drain on paper towels. Combine 1/2 cup sugar and nutmeg in small bowl. Roll warm puffs in mixture.
