Fried Green Tomato and Onion Sandwich

 

Ingredients

1 large green/pink tomato or two medium tomatoes (seeded and sliced)

Flour

Cornmeal

4 slices of whole wheat bread, toasted

Hellmann's mayonnaise

1 small Vidalia onion (or any sweet onion), thinly sliced

Garlic Salt

Lawrey's Seasoning

Margarine

 

 

Directions

Wash, and slice tomatoes. (carefully remove seeds from the slices).

Mix a little flour and cornmeal in a bowl.

Dip tomato slices into the flour/cornmeal mixture, one slice at a time.

Season each dipped slice with garlic salt and Lawrey's Seasoning

Melt margarine in heavy skillet and fry at medium heat in medium-hot skillet until tomato coating is golden brown.

Remove from skillet and blot on paper towels.

Spread mayonnaise on each slice of warm toast.

Cut fried tomato slices in half (so you can better cover the slice of toast) and arrange on one slice of toast. Arrange onion slices on top of the tomatoes. Put the other slice of toast on top and you have a unique southern sandwich.

Serves 2
