Chocolate Mousse Pie


Ingredients

Pre-made pie crust (or I made one using a combination of Whole Wheat flour and unbleached flour instead of all-purpose flour and my favorite recipe)
1 lg. box of sugar free instant chocolate pudding
1 2/3 c. low fat/skim milk, cold
1 8 oz. tub whipped topping (I used sugar free Cool Whip)
Mini Semi-Sweet or Bittersweet chips (optional, but I find it better without them)
 
 
 

Procedure

Bake pie crust according to package or recipe directions.
 
Mix your pudding and milk until it is thick and smooth.  Take half of the whipped topping and fold it into the pudding, gently, until it is of uniform color.  Pour the mousse mixture into the baked pie crust, top with remaining whipped topping.  Garnish with mini chips and refrigerate until set.
