Cottage cheese pancakes


Ingredients

 
1 c. low fat or regular cottage cheese
4 eggs or equivalent amount of egg substitute
1/2 c. oatmeal or rolled oats
1/2 teaspoon vanilla extract
1-2 tablespoon of veg. oil

Procedure

put allingredients into blender or food processor.  beat until well blended.  Cook on lightly greased griddle over medium high heat.

Serve with plain yogurt and fresh fruit, cinnamon, or butter and sugar free syrup.  Serving:  3   4inch ancakes per serving

Tastes like regular pancakes.  Makes 12  4 inch pancakes
