Low Sugar Maple Nut Granola


Ingredients


4 C Quick-Cooking oats (not instant)
1 C sliced almonds, broken pecans or mix of both
1/2 C unsweetened shredded coconut
1/2 T cinnamon

1/4 C Smart Balance margarine
1/2 C sugar free maple syrup (I use Cary’s, the Canadian brand) <o:p></o:p>

1/4 C canola oil
1/2 C Splenda (I used ½ white Splenda and ½ Brown Sugar Blend Splenda)
1 T maple extract (I could only find imitation maple extract)
1/8 tsp salt

Procedure

Preheat oven to 300. Toss first four ingredients in a very large bowl. In a saucepan, combine remaining ingredients and melt together over medium heat. Bring to a soft boil, then pour over the oat mixture. Toss very well to mix together. Make sure all the oat mixture is coated. Spread mixture on a cookie sheet, crunching with your hands to make clumps. Bake for about an hour, stirring once halfway through.

8 servings. 290 calories per serving.  If this is 8 servings, you’re a very HUNGRY person.  It’s more like 16 servings for me.<o:p></o:p>
