Black Bean and Brown Rice Burritos


Ingredients

10 low carb wheat tortillas (or whole grain)
1 large can of black beans (or two small cans)
4 servings of instant brown rice
low fat sour cream
low fat shredded cheese (whatever is your favorite)
Salsa Verde or regular salsa
Chopped Cilantro (optional)
Taco Sauce (optional)
 
 

Procedure

Cook rice per package directions and warm beans either on the stove or in the microwave.  Warm tortillas in either microwave or in oven on 200 degrees.  Assemble burritos as follows:  tortilla, beans, rice, cheese, sour cream, salsa, cilantro, taco sauce (you can leave the other 2 off if you want) or in any order you want really.  Be careful not to fill the tortilla with too many goodies, you might not be able to fold it!
